50 YEARS OF BELGIUM-CHINA FRIENDSHIP (1971-2021)

From the Sea Grill to the Villa Lorraine, via the Art Club and Gaufres and Waffles, the two-Michelin-starred Chef, Yves Mattagne and, recently, his son Sébastien, reign over the best tables in Brussels. Faithful to their local tradition, but also inventive, daring, thanks to their travels in Asia, the Mattagne took part with joy in the LHCH International video dedicated to Belgian and Chinese gastronomy as part of the 50 years of friendly relations between the two countries. !

Part II . Sébastien Mattagne : Gastronomy, com ’and daring

Sébastien Mattagne is an ace in communications, marketing and event organization. Talents that he brings to the service of beer, in Hong Kong, with the The Artist project, from 2015, but above all in the context of daring gastronomy, from the world-famous Dinner in the Sky, to the family project, 100% Belgium , Gaufres and Waffles, in the « Galerie de la Reine » in Brussels.

It was in this Belgian Waffle Temple that LHCH filmed a video and organized an interview.

LHCH: Hello Mister Mattagne Junior.

Sébastien Mattagne : Hello, welcome at Gaufres and Waffles situated in Royal Galery, Brussels. For the 50 years of friendship  between Belgium and China, I am happy to introduce our concept Gaufres and Waffles here. 

LHCH: So what is this concept ? Not classical Belgian Waffles ? 

Sébastien Mattagne : We have  two types of sweet Waffles in Belgium. In the south, in Liege, it is very compact with sugar inside. In Brussels , the waffles are more light, you can feel the air inside of it ! But here, our speciality is also the « Savoury » waffles. Our Savoury Waffles has a little difference  : you have bigger  squares to put the ingredients  or topping. But Our dough is a very neutral dough. That means …  whether the waffle is salty or sweet, its dough will always  be originally neutral. This allows us to work with a Sweet version  and a Savoury version ! This is  all the base of our concept that we develop with the two Michelin star Chefs Yves Mattagne.  All series of our Savoury waffles  that you can choose in many different ways !

LHCH: Thank you Sébastien, the two Belgians on our film crew are going to taste the salty waffle because it is out of the ordinary here.

Sébastien Mattagne: Yes, but you shouldn’t be afraid. These are gourmet and « starry » savoury waffles!
